Grown in Thailand, this ginger undergoes a meticulous transformation process: controlled drying to concentrate the aromas, manual sorting and grading to ensure uniform texture, followed by light sugaring that softens the natural bite of the rhizome without masking it. The result is a ready-to-use dried fruit, stable, with its characteristic heat preserved upon opening the packet.

In professional kitchens, this ginger is ideal for marinades for lacquered duck or grilled pork, wok sauces, and express curries where the sugar in the piece already balances the dish’s acidity. In pastry, it naturally enhances panna cottas, homemade gingerbread, or plated dessert garnishes.
