The Nyons black olive is the only French olive to benefit from a Protected Designation of Origin (AOP). Sourced from the Tanche variety, grown on the hillsides of the Drôme hinterland, it is harvested in winter at full black maturity, then aged using a traditional method that gives it its fleshy, slightly wrinkled texture and delicately fruity flavor, without the bitterness of olives treated in rapid brine.
In foodservice, this black olive stands out on antipasti boards and fine charcuterie platters thanks to its aromatic richness. It forms a balanced base for tapenade, ready to enhance croutons, grilled fish, or white meats.
