Wholesale saffron: one single form, three pack sizes

Palimex's wholesale saffron aisle comes down to three references, and all of them share the same form: the whole filament, also called the stigma. A food wholesaler since 1984, we supply restaurateurs, caterers, pastry chefs and delicatessens buying on a trade registration. What changes from one reference to the next is therefore not the product itself, but the way it is presented to you: a jar, a small pot, a sachet pack.

This is the only aisle in our spice range where the selling unit is counted in grams rather than kilos. That one particularity governs everything else: how you dose it, how you store it, and even how you order it.

Why we list filaments only

A filament can be looked at. It has a length, a shape, a colour; you can take it between two fingers and recognise it. A powder cannot: it has already lost what allowed it to be identified by eye. That is why our catalogue carries no ground saffron — not as a matter of principle, but because the filament leaves the professional buyer a means of checking that powder takes away.

This reflex matches the logic of international reference texts, which describe each foodstuff through verifiable product criteria rather than through its trade name alone: the Codex Alimentarius FAO/WHO product standards are drawn up commodity by commodity. For a buyer the consequence is simple: the more the product stays whole, the more what is claimed about it remains checkable.

The three pack sizes in the aisle

The choice is not made on total quantity but on the rate of opening: a unit once opened begins to lose its aroma, a sealed unit waits for you. Ten small units opened one after the other are worth more than one large unit opened too early.

None of these three references exists loose by the kilo, and that is deliberate. If you are looking for a pre-balanced seasoning rather than a spice to work on its own, our wholesale spice blends answer a different need.

Dosing: you count, you do not pour

On every other spice in the aisle, a dose is expressed in spoons or in grams per kilo of preparation. Here it is written in filaments, or in tenths of a gram. A serious recipe sheet therefore records the exact number of filaments per portion, not "a pinch" — the pinch is what makes a food cost drift from one service to the next.

Over-dosing, moreover, is not merely expensive: it is noticeable. Beyond a certain point saffron stops being a perfume and turns into bitterness, and the dish is lost even though more product went into it. This is also why it should not be mistaken for a colouring: wholesale turmeric gives the yellow, at an entirely different cost and without laying claim to the same aroma. These are two distinct functions, not two grades of the same product.

Steeping first, in four steps

Saffron is not scattered over a finished dish: thrown in dry, it stays a coloured filament sitting in the middle, and most of what you paid for remains locked inside it. The one gesture that changes everything is steeping it first:

  1. Weigh out the exact dose and crush the filaments lightly between your fingers, over the container, so that none is lost.
  2. Let them soak for around twenty minutes in a hot but not boiling liquid — water, stock, milk or cream depending on the dish.
  3. Pour in the whole infusion, filaments included: the colour and the perfume are now in the liquid.
  4. Add it towards the end of cooking rather than at the start, so that prolonged heat does not disperse what has just been extracted.

This principle of extraction by a hot liquid is the same as that of wholesale cinnamon quills: in both cases the whole spice only gives itself up to an infusion, and contact time does more than quantity.

Storing a product that fears light

Badly stored saffron loses its value quickly, and it loses it silently: it keeps its appearance long after it has lost its interest. A few storeroom rules are enough to protect the purchase:

  • Reseal the unit immediately after taking a dose, without leaving the container open for the length of a service.
  • Keep the product in its original packaging, away from light: the jar, the pot and the sachet pack serve a technical purpose here, not a decorative one.
  • Keep it away from the heat of the ranges and the steam of the cooking areas, the two enemies of any spice store.
  • Keep the batch number and the best-before date until the unit is completely used up, as with the rest of the dry goods.

A well-kept storeroom is worth more here than anywhere else: at this level of value per gram, every unit left forgotten and open is a straight loss, and it shows up on no inventory.

Saffron is the one spice where the real waste is not throwing it away, but using it badly: one dose steeped for twenty minutes gives more than twice that dose thrown dry into the pan. Buy small, open late, always steep.
