Wholesale cumin is one of the most heavily used spices in professional kitchens that cook in series. A food wholesaler since 1984, Palimex lists it under two labels, Epika and Espig, in the two forms that actually matter to a chef: whole seed and ground. That is not a detail of assortment. These are two different products, dosed differently, keeping at a different pace, and used at different moments of the service.

Two forms, two kitchen uses

Whole seed works under heat. Dropped into a dry pan or into the fat at the start of a tagine, it releases its aroma through temperature and perfumes the whole preparation without ever clouding a sauce. It is the form for long cooking, couscous, lamb marinades, stocks and leavened breads where the seed stays visible in the crumb. Ground cumin incorporates immediately: it lends colour and flavour to a falafel mix, a stuffing, a cold-mounted sauce or a house baharat-style blend with no infusion time at all. The choice is not a matter of preference but of process.

Dosage follows the same logic. Whole seed diffuses gradually and forgives a generous hand; powder acts at once and saturates a dish quickly. When a recipe card moves from one form to the other, the quantity has to be recalibrated rather than carried over, and then locked in writing so that the result stays identical from one cook to the next. That is precisely what an establishment serving the same dish all year round is looking for: not the peak intensity of a single day, but repeatability across every service.

Toasting to order, a professional habit

Whole cumin toasted just before use does not have the same profile as a powder opened three months ago. The method takes four steps and passes down the brigade without any difficulty:

  1. Heat a dry pan, with no fat at all, over medium heat.
  2. Add the seed in a single layer and stir without interruption.
  3. Pull it off as soon as the aroma rises, before any marked browning.
  4. Turn it out onto a cold tray straight away, then grind or crush as needed.

Storage, best-before date and good practice

A dry spice does not spoil dramatically: it fades. Monitoring is therefore a matter of organisation as much as of storage, and it belongs in your food safety management plan like the rest of the store room.

  • Store away from light, away from the heat of the ranges and the damp of the washing area.
  • Reseal tightly after every use: air is the first enemy of any ground spice.
  • Apply strict first-in first-out rotation and date every decanted container.
  • Never decant powder into a container larger than the volume you use in a month.
  • Keep lot marks and best-before dates until the pack is finished, for upstream traceability.
