Wholesale ground ginger, a dry heat

Wholesale ground ginger holds a place of its own on the spice aisle: it does not merely add scent, it adds heat. A dry, rising heat, quite unlike the bite of a pepper or a chilli, which structures a gingerbread as readily as an Asian marinade. Two products under one name

Beware of a common confusion when ordering: the word "ginger" covers two families of product here, sharing neither use nor aisle. On one side the spice, a rhizome dried and then ground, dosed to the gram in savoury or sweet preparations. On the other side sweetened dehydrated ginger, in cubes, slices or pieces, which is a confectionery item and sells in 5 kg pails as well as in cases.

Where the ground form works

Powdered ginger is a background spice, rarely the headline on its own. Here are the uses our customers make of it most often:

The choice is less about price per kilo than about organisation. A pastry chef producing gingerbread from October to January is better served by the case, which spares them keeping a kilo open the rest of the year; a caterer building marinades weekly gains from the bag. Dosage and storage

Ground ginger is dosed with restraint: its heat rises during cooking and does not come back down. The method comes down to four points:

  1. Add it at the start of the preparation, never as a last-minute correction.
  2. Add in small touches and taste the cooked preparation, not the raw one.
  3. In a leavened dough, allow for resting: the scent keeps diffusing.
  4. Write the chosen quantity on the recipe card as soon as it satisfies.

In the store room the rules are those of any ground spice and belong in your food safety management plan: storage away from light and damp, tightly resealed and dated containers, first-in first-out rotation, lot marks and best-before dates kept until the pack is finished. Imported spices also fall under a European framework on pesticide residues, whose current state the Commission publishes on its pesticides portal.
