Wholesale turmeric, a spice bought for its colour

Wholesale turmeric is not bought like the other spices on the aisle. What is expected of it first is colour: it is what gives rice, curry, marinades and sauces that clear yellow no other powder replaces. A food wholesaler since 1984, Palimex lists it under the Epika and Espig labels, in a range deliberately narrowed to the form that is genuinely useful in a professional kitchen: ground turmeric.

Why the range is ground only

Turmeric is a rhizome. Once dried it becomes extremely hard, almost impossible to reduce properly with ordinary kitchen equipment, and the grind that comes out of it stays uneven. An already sifted powder solves that problem upstream: it disperses evenly, colours without leaving dark specks in a pale sauce and can be dosed to the gram. That is why our assortment carries ground turmeric only, and why there is no whole version worth stocking in catering.

That consistency matters more than anything in an establishment serving the same dish several hundred times a month. A turmeric whose colouring power varies from one bag to the next forces the cook to correct by eye, plate after plate, which costs brigade time and product. Steady supply from a wholesaler is worth more here than a one-off lot bought at the best price of the week.

Dosing a colouring spice

Turmeric is handled as much as a colouring agent as an aromatic. The right habit comes down to four points, easy to pass down the brigade:

  1. Disperse the powder in hot fat before any liquid: the colour sets better and no lumps form.
  2. Add in small touches and judge on a cold plate, never in the hot pan, where the result always looks stronger.
  3. Never correct a pale dish at the end of cooking: raw powder leaves a noticeably earthy taste.
  4. Write the chosen quantity on the recipe card as soon as it satisfies, and then stick to it.

Choosing a pack size is therefore less a question of price than of organisation. Once you know your monthly use, you order the size that will be finished within a few weeks rather than leaving a large bag open for half a year. A business that uses turmeric for a single dish on the menu is almost always better served by the case of single portions than by the kilo bag, even when the price per kilo looks more attractive on paper.

Storage: colour fades first

Turmeric powder does not spoil visibly: it pales. That is the first signal, well before aroma, and it is monitored like the rest of the store room within your food safety management plan.

  • Store away from light, the main enemy of any pigment.
  • Reseal tightly after every use and avoid repeated transfers between containers.
  • Apply first-in first-out rotation and date every decanted container.
  • Do not decant more than a month of use into an open bin in the kitchen.
  • Keep lot marks and best-before dates until the pack is finished, for upstream traceability.
  • Set aside dedicated containers: turmeric stains plastics and seals for good.
